THE RESTAURANT

The greatest secrets of perfect combinations hide behind the Signature Cuisine.

Dishes inspired by creativity, seasoned with sophistication, gently wrapped in the legacy of Portuguese gastronomy and served with the bold spirit of international cuisine.

Without the boundaries of flavours and the constraints of creation, the restaurant AUGE is a map of destinations for the palate, which unveils signature dishes by Chef André Silva.

THE CHEF

Michelin-starred chef and winner of several prizes, including “Revolta do Bacalhau”, “Chef Cozinheiro do Ano”, “Garfo de Ouro” from the restaurant guide Guia Boa Cama Boa Mesa, André Silva attended several international institutions where he trained in different types of cuisine. A newcomer at the AUGE, André Silva sublimes any gastronomic experience.

THE CELLAR

Passion for the world of wine and product differentiation.

Relics and new talents in oenology starring on a single wine list at different levels of excellence.

A cellar dedicated to the best Portuguese and foreign wines for discovering glass in hand and to savour the boldness of wine producers with minimum intervention.

The wine list includes the best sparkling wines, whites, rosé, reds and liqueur wines, combined with top-quality service and paired with the food prepared by Chef André Silva.

THE SOMMELIER

Rodolfo Tristão is the mentor of AUGE’s wine cellar, whose careful selection provides a road map to the outstanding terroirs made in Portugal.

With over 20 years of experience in the world of wines, “his great passion”, Rodolfo is an expert in hotels and restaurants and has worked with top national chefs.

THE COCKTAIL BAR

Port wine reveals itself in a range of hues: for tasting its essence or in signature cocktails, developed for expressing the versatility of a Portuguese icon transcending the borders of its territory.

The AUGE Cocktail Bar is an embassy of Port wine in the city with the same name, which celebrates it at all times. Ruby, LBV, Dry White, Lágrima White or Rosé are the prevailing colours, on an expedition of a variety of signature cocktails that explore less common techniques such as cold infusion, homemade syrups produced in vacuum and at low temperatures, tropical fruit foam, with the expertise of preparing a special order and the informality of one constantly in search of new experiences.

THE MIXOLOGIST

With over 16 years of experience and currently living in London, Pedro Paulo has applied his techniques and researched different bar and cocktail practices in over 30 countries; he is the keeper of a deep knowledge of a professional traveller, reinforced by the dedication to the art of cocktails, without losing sight of Portuguese traditions and quality products.
